Day 11 – Syrah 2015

We dug deep in the cellar to bring you this fantastic library wine! Day 11 offers you our 2015 Syrah, a big, bold wine upon release, but that has now mellowed and softened with 5 years of bottle aging. We would suggest that you decant this wine to let it open up a bit. Take a quick sip as soon as you open it, but then wait at least 30 minutes before enjoying a glass. You’ll be able to see the changes in both the aroma and taste. We hope you enjoy this special wine!

For today’s food pairing suggestion, we are offering a recipe for prime rib with a peppercorn gravy. As most of you already have meals planned for the holidays based on your own traditions, you may need to tuck this dish away until the new year and enjoy it with a bottle of our Syrah from a more recent vintage!
