75% Sauvignon Blanc – 25% Semillon
A classic white Bordeaux blend, but this is pure Okanagan in style! Both varietals were hand-harvested early in the morning to preserve the acidity, lightly pressed and fermented separately: barrels for the Semillon and stainless steel for the Sauvignon Blanc. All of the Semillon and a small portion of the Sauvignon Blanc was then aged for 5 months in a combination of 2nd fill and neutral French oak barrels.
Soft aromas of gooseberry and citrus. This dry white blend has a round mouthfeel with a bit of weight and flavours of gooseberry, honeydew melon, grapefruit and toasted caramel notes on the finish. Crisp acidity keeps it fresh on the palate.
This is a highly versatile wine on the table. The textural complexity, medium body and crisp acidity enables Collusion to pair well with many different dishes. Try it with a goat cheese and arugula flatbread.
