Like a good secret, this wine is deep and dark, and you’ll want to keep it all to yourself! We only made 5 barrels…that’s it. Trust us.
The grapes were harvested on October 9th. After de-stemming and a light crushing, the Syrah underwent a 2-day cold soak. After a slow and warm fermentation, the wine underwent another 14 days of maceration to extract more phenolic compounds. The wine spent 15 months in 35% new French and American oak barrels.
Full-bodied with a luscious mouth feel, the tannins are lifted by a hint of acidity. Aromas of blueberry, blackberry and a bit of smoke are followed on the palate by savoury notes of black olive, clove and smoked bacon. The wine lingers with the hallmark pepper notes on the long finish.
For cheeses, think soft and stinky to match the earthiness of the wine. For meats, roasted game, smoked baby back ribs, or even a blue cheese burger.
