Ingredients
 

  • 16 Medjool dates pitted
  • 120 g soft goat cheese
  • ¼ cup toasted walnuts finely chopped
  • 1 tsp fresh thyme leaves optional
  • 2 tbsp balsamic vinegar
  • 1 tsp honey

Instructions
 

  • Mix goat cheese, walnuts, and thyme in a small bowl.
  • Make a slit in each date (if needed) and spoon in about 1 teaspoon of the cheese mixture.
  • Simmer balsamic and honey in a small pan for 2–3 minutes until syrupy.
  • Drizzle glaze over the stuffed dates and serve.
