Our vow of silence. Trust us.
A crisp, dry rosé made from 30-year old Merlot vines, grown at our Conviction Ridge estate vineyard in Kaleden. The delicate pale pink hue of this rosé perfectly disguises the intensity that lies within. Hand picked and hand sorted, the wine was made in separate batches harvested 2 weeks apart. The first batch captured the acidity and fresh fruit flavours. Destemmed and lightly crushed, the grapes were cold soaked for 2 hours before heading to the press. The second batch captured riper flavours, and went straight to the press with no maceration time. Only free-run juice made its way into this wine.
Don’t let the pale colour fool you…this wine has amazing depth and complexity. The vibrant nose has the hallmark aromas of wild strawberries, raspberry and a hint of watermelon. On the palate, the entry is bright and juicy, dominated by wild red berries and rhubarb. There’s a surprising creamsicle note on the finish. Crisp acidity with only the slightest hint of sweetness, this wine finishes dry.
Refreshing on its own, our rosé is also a highly versatile wine on the table. The textural complexity, deep flavour and crisp acidity enables Omertà to pair well with many different dishes. Fresh market salads, grilled fish and aged cheese comes to mind. Want to see the versatility of this rosé? Try it with a sous vide duck breast, finished in a hot skillet and served with a pink peppercorn sauce.
