Day 12 – Unsanctioned Series Cabernet Sauvignon 2019
We made it! Day 12 is here, and thus the conclusion of our 2021 holiday wine advent calendar.
We decided to close off this year’s calendar with a truly special wine: our not-yet-released, and wine club exclusive, Unsanctioned Series Cabernet Sauvignon 2019. This is a micro-lot wine, produced from a single new French oak barrel. There are only 288 bottles of this wine, with most of it allocated to our Secret Society wine club members. In fact, outside of this advent calendar, the only way to get your hands on this wine is to join our wine club! We hope you enjoy this special treat.
For today’s food pairing suggestion, we are drawing on Binging with Babish for a classic dish: Chateaubriand Steak. Make sure to watch his video, as he shows you three different ways to prepare this dish. Our preference is for the reverse sear method, but you take a look and decide for yourselves.

This is a rare wine. We only bottle 100% Cabernet Sauvignon in exceptional vintages. This wine is from a single new French oak barrel. Despite being Cabernet Sauvignon and spending close to 2 years in barrel, this wine is quite soft and approachable now. Bottled unfined and unfiltered.
Rich and concentrated. On the nose, lots of black cherry, blackberry and cassis. Subtle toasty cedar notes with a hint of vanilla. On the palate, the entry is bright and juicy with cherry and currant notes. The tannins are supple with just the slightest edge, with savoury notes of baking spice and graphite on the long finish.
For our Cabernet Sauvignon, this wine is best paired with roast beef or grilled Portobello mushrooms. For something a bit more casual, try a blue cheese burger.
